Chocolate Butterscotch Bars Recipe

This year I decided to take our family’s classic Peanut Butter & Butterscotch bars recipe a little further. It was a small change, and everyone has their own version of this bar recipe, so I thought I’d add my new recipe here because I can’t go back to the way they were before.

A delicious twist on the butterscotch bar recipe
I can’t get enough of this new twist and I made sure I was in the right spot this weekend to grab up the last bar on the platter.

Chocolate Butterscotch Bars
A nice balance to the classic butterscotch marshmallow squares.

Ingredients
  1. 1/3 cup semisweet chocolate chips
  2. 3/4 cup all-natural peanut butter
  3. 1 pkg butterscotch chips
  4. 1/2 cup butter
  5. 1 pkg miniature marshmallows
Instructions
  1. In a microwave-safe bowl, combine chocolate chips, peanut butter, butterscotch chips, and butter and melt in microwave until just melted (about 1 - 2 minutes), then mix together and set aside.
  2. Lightly rub butter inside your baking dish (to prevent mix from sticking).
  3. When mix has cooled a few minutes, add marshmallows (adding too soon will make marshmallows melt).
  4. Pour into dish and let set in the fridge for two hours before cutting into bars.
Notes
  1. See photo below for dish size. I filled two baking dishes with this mix.

    Mmmm, so when are you bringing some of these by? They look so good.

    The family recipe we have calls for the marshmallows to be completely melted and no PB, but I am going to have to try it this way next time.

      Thanks Julia. I’m going to be making a batch of these shortly so they may be around on the holidays. If they last that long.
